Yummy Tostadas

As a family, we have been trying to eat healthier and man, a meal like this feels like we are totally getting there. I have given up eating dairy and gluten not because I'm allergic, but because my body feels terrible afterwards. {bloat, headache, brain fog, and tiredness} This is not to say that I have sworn off gluten and dairy ... I'm still in the "maybe I can have one plate" phase. Sometimes I'm ok, most of the time I am not. So I tend to stay away. My family doesn't have these issues and they were craving something new and exiting for dinner. I made tostadas. I had 2 bites because tostadas. If you are looking for a twist in your weekly menu, this is a great meal to throw in the mix. It is neither gluten or dairy free, but it is delicious.

Recipe: Bella's Tostadas

1 lb Grass fed Bison

1 Packet GF, No MSG Taco Seasoning

1 Cup Low Fat Mexican blend shredded cheese

2 Banana Peppers

1 Tomato (large)

3 Scallions

Avocado Drizzle:

1 Avocado

1/2 lime

Handful cleaned cilantro

EV Olive Oil .. Salt .. Pepper

8 Tostadas (I use these)

In a pan with a TBSP of olive oil, brown bison. Drain. While draining, chop then saute banana peppers. When soft, add meat back in with contents of spice packet and 1 cup of water. Mix. Cook until water is thickened and almost all absorbed.

Heat oven to 350 F - Put tostadas on baking sheet and heat for 10 minutes. Remove.

Chop tomato + Scallion. {While tostadas are in oven}.

Assemble: Add a spoon or two of meat mix on tostada. Sprinkle with cheese. Drizzle with Avocado sauce. Garnish with tomato + scallion.

Avocado Sauce (make ahead): In a blender or nutribullet, add chopped avocado, juice of 1/2 lime, cilantro, salt + pepper to taste. Blend until smooth. If you need more liquid add more lime juice or water a few drops at at time.

My family enjoyed this meal so much they asked me to make it again soon. I'm working on a version that works well with my dietary restrictions.
